As a result, I have been looking for light and nutritious options to eat especially after the indulgent summer holidays!  The main mission, however, is not wanting to give up on fun and flavour.

These loaded courgette boats have all the taste of pizza without the carb overload and bloated feeling afterwards.

The firm texture of courgette provides the perfect vessel for tasty baked tomato sauce and tangy melted cheese.  Gluten-free, delicious and a great way to get extra vegetables in your diet.  Brilliant!

After bingeing away over the past few months being fed irresistibly by my mums living in England, eating out in Spain and overdoing it on desserts in Belgium, the physical effects are beginning to show in full force…  Enter please healthy substitutions of unhealthy favourites to start the diet clean up!

The idea of these pizza boats have been floating around the internet for a while and it reminded me of the pizza boats on French baguettes my mum used to make.

With all the fun of personal toppings, these courgette boats are free from that wheat base of bread or dough and definitely result in a lighter meal.

Essentially, they are stuffed baked courgettes so be adventurous with your toppings and vary them for texture; I went for piquant jalapeños and sweet red onion for a spicy version.

Add peppers, sliced mushrooms, olives or even green chillies if you like it extra hot.

Another idea would be to keep it truly simple and classic with some basil leaves and pieces of mozzarella cheese.

Ready to eat in about half an hour, the recipe for these courgette pizza boats really is easy and straightforward.  Good for when you want to cook up something quick without going for processed pre-made or high calorie meals.  Pizza without the guilt!

Instructions
  1. Preheat the oven to 190 degrees Celsius and grease a baking tray with oil. Slice the onion, tomato and grate the cheese.
  2. Cut the courgette in half lengthways.

  3. Using a teaspoon, scoop out the middle soft seed section of the courgette.

  4. Be careful not to scrape too deep hitting the skin along the bottom. Leave at least a 5mm thickness from the skin. Brush the boats all over with some olive oil.

  5. Place the courgette centre scrapings into a bowl and squeeze dry with a kitchen towel or clean tea towel to release excess water.

  6. Mix the courgette with the passata sauce and season well with salt, pepper and a teaspoon of oregano. Place the mixture evenly into the courgette boats.

  7. Top the sauce with slices of onion, tomato and jalapeno.

  8. Finally sprinkle over the grated cheese and the rest of the oregano.

  9. Bake in the oven for 20 - 25 minutes until the courgette is tender to your liking. If preferred, grill for the last 5 minutes for an extra crispy topping.

  10. Enjoy warm with salad or sauteed greens for a light meal.
