I made these at the end of August last year for a cousins family reunion in London.  The last event before my husband, son and I headed back to Dubai after the long summer.

It was a fun afternoon catching up with extended family that had been continuously growing in my absence.  It was exciting to see some very new additions and some of my cousins’ children who have since turned into full grown adults – how long had I been away?!

I brought along these all butter biscuits to have with coffee and tea after the lunch.  It was my way of sharing my experience of baking and to let them have a taste of what had been keeping me busy over in Dubai!  I created an easy recipe so I could whip them up fresh that morning before the event and kept the flavour popular to cater for all ages.

These biscuits are easy to pack and are great for gifting.  They should last a week in an airtight container once cooled.  Instead of chilling in the refrigerator, the raw dough can even be frozen up to a fortnight and baked for homemade biscuits quickly at any time.

Some of those who came along to the cousins’ lunch asked for the recipe soon after so I thought it was about time I wrote it up.  So here it is in 2017… better late than never!

Instructions
  1. Take out the egg and butter from the fridge in advance to bring to room temperature.
  2. Cream the butter in a large bowl until smooth.
  3. Gradually add the caster sugar whisking in between (use an electric whisk or stand mixer for ease). Whisk for at least 5 minutes until all sugar is added and the mixture is light and fluffy.
  4. Separate the egg and add the egg yolk into the mixture and continue to whisk until incorporated.

  5. Add the vanilla extract and mix.
  6. Finally sieve in the flour and salt then fold in with a spoon. Mix well until it forms a soft dough.

  7. Flatten the dough into a disc and wrap with cling film. Place the wrapped dough in the fridge to chill for at least 15 minutes. This will firm up the dough making it easier to handle later.
  8. Meanwhile, preheat the oven to 180 degrees Celsius and line 2 baking sheets. Pour the coconut and granulated sugar onto a plate and mix.
  9. Once chilled, unwrap the dough and divide into 20 pieces. I do this by cutting the dough up like a grid into squares.
  10. Roll the pieces into balls using your hands. Be quick to avoid the dough melting and becoming sticky. Then roll each ball into the coconut sugar mix.
  11. Place ten coated balls on each tray with space between them then bake for 15 to 20 minutes. The biscuits should slightly brown and flatten on baking.
  12. After 5 minutes, remove from the trays and place on a wire rack to cool completely. They will crisp up on cooling. Enjoy with tea, coffee or crushed over ice cream for a quick dessert.
