A Party Treat for the Closing Party of Summer

♥ Snickers Surprise Cookies

It’s come to the end of summer and I thought I would end it on a sweet, chocolately high.  I promise this will be the last of the naughty bakes… for a little while at least.

With the children back at school and holiday blues kicking in, I think we all deserve that last treat to celebrate the summer.


Spending most of the past few months holidaying in England meant the time just whizzed by.  Catching up with friends, meeting new babies in the family and making the most of the wonderful weather and delicious fresh seasonal food that summer brings made the time simply disappear faster.

Having just got back to Dubai,  I am already reminiscing on one of many highlights of my trip; when I went to visit my brother and his kids.

Whilst snooping around for a snack at their house, I stumbled upon a small stash of chocolate in a corner cupboard.  All my English chocolate favourites; Crunchie, Dairy Milk and Snickers all in one place and understandably hidden away for good reason!  Immediately I went for the Snickers and decided to bake something with it.

My sister-in-law being a keen baker herself, had all the necessary baking ingredients I needed well stocked up for me to make some party cookies.

Even better that the only tools required for this simple recipe are a mixing bowl and a wooden spoon.  You could use an electric whisk or stand mixer for speed, however with my niece and nephew around that day to eagerly help with that extra elbow grease, the mixture whipped up fine.

Together we cracked on and blitzed up a batch of crumbly, crunchy peanut cookies with some sneaky snickers hidden inside!  A fun party cookie to enjoy with friends and family.  Oooh what a treat indeed.

Instructions
  1. Preheat the oven to 180 degrees Celsius and line 2 baking sheets. Cut each Snickers bar into 6 pieces.

  2. Place the butter in a mixing bowl and beat until creamy.

  3. Add the sugar and continue beating until light and fluffy.

  4. Add the egg yolk, salt, vanilla and peanut butter and mix well.

  5. Finally sieve in the flour in and mix to create a soft dough.

  6. Half the dough into 2 portions then half again. Portion out each quarter into 3 balls of dough by rolling in your hands. The dough will be slightly sticky.

  7. Place 6 dough balls on each tray leaving space between each one.
  8. Squash a piece of the Snickers into the centre of each ball and rub over dough from the sides to cover the centre.

  9. Place in the oven and bake for 15 minutes until slightly golden.

  10. Leave the cookies to cool for 5 minutes before placing on a wire rack to cool completely. Eat slightly warm or cold later.
