I apologise if you are trying to get beach body ready, these breakfasts are not for you.  Tasty, eggy, indulgent and a break from the usual weekend fry-up is what they are.  Rustle them up for a delicious brunch or get practising for the upcoming Father’s Day.  All of these recipes include baking so keep the oven hot and at the ready!

The first recipe is a simple cheese and onion egg on toast.  I was inspired by the countless videos of fried bread with egg holes seen on social media.  However, I wanted to create the effect without the frying pan.

This egg on toast really has bells and whistles and all!  Crunchy bread with a gooey egg centre, layered with crispy cheese and flavoured with onion.  The thin layer of mustard packs a punch and takes the simple egg toast idea to another level.

Cheese and Onion Egg Toast
RECIPE NOTE: To avoid raw egg leaking out of the bread before baking, ensure the bread used is not stale and the eggs used are cold from the fridge.

  1. Preheat the oven to 180 degrees Celsius. Lay the slices of bread on a lightly greased or lined baking tray. Bake the bread for 5 minutes to lightly toast them.
  2. Finely chop the onion and grate the cheese.
  3. Lightly butter 2 of the toasted bread slices then spread a thin layer of the mustard if using. On the other 2 slices, cut a square out of the centre of each slice.
  4. Stack the cut out slices on top of the buttered slices and press down firmly to seal.
  5. Carefully sprinkle some chopped onion around the well. Do not worry if some falls into the middle.
  6. Then line the well with the grated cheese.
  7. Whisk each egg individually and pour into each of the well's. One egg per bread stack.

  8. Bake in the oven for 15 to 20 minutes depending how runny you like your egg. The cheese should have melted and turned golden crispy. Season with some salt and pepper and enjoy!

Next are two variations of Dutch baby pancakes which are apparently American but derived from Germany.  A cross between a Yorkshire pudding and a pancake is how I see it.  Whatever the heritage, they are absolutely delicious!

Following my obsession with apple and cinnamon, these apple pancakes are a real favourite.  The recipe is based on Sorted Food’s caramel apple pancakes but I have simplified it slightly and unsweetened the batter.  This didn’t take away from flavour; nevertheless it allowed me to use the same batter to create a savoury version.

Red pepper and mushroom pancakes can also be made with the Dutch baby pancake batter.  You could easily create one of each sweet and savoury from one batch.  Simply use only one apple and half the red pepper and the amount of the rest of the vegetables as written in the instructions.  Remember to wash out the pan in between.

Use a skillet pan or any oven proof frying pan. This recipe can make 4 mini individual pancakes or 2 large pancakes depending on the size of the pan you are using. I used a large frying pan and cut the pancake in half to serve.

  1. Preheat the oven to 220 degrees Celsius. Prepare the apples by skinning, coring and slicing them.
  2. Crack the eggs into a bowl and whisk well. Add the flour, baking powder and salt then keep whisking until smooth and lump free.
  3. Gradually add the milk. This will help with combining it all. It should turn into a smooth runny batter.
  4. Heat the pan on a medium heat and add the butter.
  5. Place the apples onto the pan to cover the base and cook for a minute.
  6. Sprinkle over the sugar and cinnamon. Cook the apples for another minute stirring them around. The apples should caramelize and turn golden brown.
  7. Pour some batter over the apples enough to cover them. Then place into the preheated oven. Bake for 10 to 15 minutes but do not open the oven door before 10 minutes at least. The pancake should puff up and rise.
  8. Serve straight from the oven. Throw on some chopped banana and walnuts. Or if you're being extra naughty add a scoop of ice cream or drizzle some cream. Dust over a teaspoon of icing sugar for presentation. Beware the pan handle will be hot!

  1. Preheat the oven to 220 degrees Celsius. Slice the red pepper, mushrooms, onion and finely chop the garlic. Grate the cheese.
  2. Crack the eggs into a bowl and whisk well. Add the flour, baking powder and salt then keep whisking until smooth and lump free.
  3. Gradually add the milk. This will help with combining it all. It should turn into a smooth runny batter.
  4. Heat the pan on a medium heat and add the butter/oil. Add some of the red pepper, mushroom, onion and garlic enough to cover the base of the pan. Saute the vegetables for around 3 minutes until softened.
  5. Pour some of pancake batter into the pan to cover the vegetables.
  6. Place the pan into the oven and bake. If you are not adding cheese simply keep the pancake baking in the oven for 15 minutes. If adding cheese, carefully but quickly remove the pan from the oven after 10 minutes and sprinkle over the cheese. Place back into the oven for few minutes until the pancake is golden brown and the cheese has melted.
  7. Serve straight from the oven with some sprinkled herbs or a drizzle of chilli sauce. Beware the pan handle will be hot!
